Blackberry Cobbler

So...like I said, I'm working on that whole baking thing. 

We have two of our neighbors coming over for dessert this evening and I have plans to make a Blackberry Cobbler. We have lived in our house since September and love our neighborhood but with the winter being so bad we just didn't have the motivation to do much entertaining. Having our neighbors over will hopefully be the first of many visits with the people living near us. 

My mom made cobbler for our family when we were growing up and it was definitely my favorite dessert. Usually she made peach. I think I tried making it once a long time ago but with my new interest in improving my baking skills I have decided to pull this recipe out again, especially since it is a family recipe. 

Here it is...

Mom's Cobbler

2 Cups sugar
2 Cups fresh fruit (peaches, blackberries, etc.)
3/4 Cups Flour
pinch of salt
2 Tbs Baking Powder
3/4 Cup milk
1/2 Cup Butter

Mix fruit with 1 cup of sugar and set aside. 

Mix Flour, salt and baking powder together. Mix in remaining sugar to flour mixture then stir milk into flour mixture and set aside. 

Melt butter in a deep baking dish

Pour batter over butter (Do not stir!)

Add sugared fruit (Do not stir!)

Bake for 1 hour at 350. 

Serve warm with vanilla ice cream and fresh mint. 

Ok, so we had a wonderful time with the neighbors! It was so great to finally have them over. As far as the cobbler goes...something wasn't quite right. Maybe it was because I used the blackberries instead of peaches. I will try to tweak it and re-post.
