Thai Crunch Salad


Zach and I currently have less than no money. This weekend however we decided to splurge and go out to lunch at CPK. There is one salad there that I have always loved called the Thai Crunch Salad and Zach graciously offered to split it with me. While we were eating it we both decided that we needed to try to make it at home. Being the culinary geniuses that we are what we came up with tonight was perhaps even better then the salad they serve at CPK. 

Feast your eyes on THIS:





It tasted as good as it looks! 

For the salad base we used: Napa cabbage, red cabbage, carrots, cucumber, jicama, edamame, cilantro, scallions. 

For the Crunch! we used: Dry roasted peanuts, and homemade fried won-ton strips (that's right! I said homemade...whipped those little puppies up all by myself). 

For the Chicken: we just lightly salted chicken breasts and cooked them in a saucepan with a bit of the lime cilantro vinaigrette.

For the dressings we put a light lime cilantro vinaigrette over everything and tossed the salad. We also drizzled our homemade peanut sauce over the top (we have perfected a peanut sauce recipe over our three years of marriage...still haven't decided if I want to share it on here or not).

We are seriously so amazing.
